ABOUT THE WINERY:

With their wine making history going all the way back to the 1700s, wine is well ingrained into the Caprara family roots. In the 1950s, they bought the estate now known as Villa Medici and from then on they continue to make some of the finest wines of Custoza. Using a photovoltaic system to preserve energy and state of the art technology in the cellar, they produce wines from grapes grown in the vineyards that require minimum intervention – resulting in consistency, quality, and character.

One of the finest Custoza blends out there. A sharp and precise wine with a gritty texture with intense aromas of peach, white flowers and bread. Insanely food friendly wine that pairs well with just about anything. Medium bodied wine with a high acidity ensures enough complexity to meditate upon, yet serves well as a stand alone drink.

Serving Temperature: Serve Custosa Superiore Villa Medici chilled, around 45–50°F (7–10°C), to highlight its crisp, refreshing nature.
No Decanting: This wine is best enjoyed fresh and vibrant, so decanting is not necessary.

Seafood and Shellfish

  • Grilled Fish: Light, flaky fish like branzino, sea bass, or sole work well with the wine’s crisp, refreshing profile.
  • Seafood Risotto: A delicate seafood risotto with shrimp, scallops, or mussels pairs perfectly with the wine’s vibrant acidity.
  • Lobster or Crab: A lobster tail or crab cakes with lemon butter sauce will enhance the subtle citrus notes in the wine.
  • Oysters: Fresh, briny oysters are a great pairing, as the wine’s crispness balances the salinity of the shellfish.

Pasta and Risotto

  • Pasta with Pesto: A light pasta pesto with fresh basil and pine nuts pairs well with the herbal and citrusy qualities of the wine.
  • Lemon Risotto: A creamy lemon risotto or risotto with a touch of white wine is an ideal match, as it complements the wine’s refreshing acidity and bright flavors.
  • Aglio e Olio: Pasta with garlic, olive oil, and chili flakes provides a simple yet flavorful pairing that accentuates the wine’s freshness.

Cheese Pairings

  • Fresh Cheeses: Burrata, Mozzarella di Bufala, or Ricotta are creamy, mild cheeses that go beautifully with the wine’s clean, fresh notes.
  • Soft Goat Cheese: The tangy flavor of soft goat cheese contrasts nicely with the wine’s crisp acidity.
  • Aged Parmesan or Grana Padano: A rich, aged Parmesan adds a savory, umami element that pairs wonderfully with the wine’s balance of acidity and fruit.

Vegetarian Dishes

  • Grilled Vegetables: Lightly grilled vegetables such as zucchini, asparagus, or eggplant drizzled with olive oil are excellent choices.
  • Caprese Salad: Tomato, mozzarella, and basil with a drizzle of olive oil is a refreshing pairing that complements the wine’s citrus and floral flavors.
  • Vegetable Tempura: Crispy, lightly battered vegetables pair well with Custosa’s vibrant character.

Charcuterie and Antipasti

  • Prosciutto and Melon: The sweetness of melon and the saltiness of prosciutto create a great contrast with the wine’s acidity.
  • Salami: Mild salami or bresaola works well with the fresh, fruity notes of the wine.
  • Marinated Olives: Savory, briny marinated olives enhance the wine’s crisp and zesty character.

Asian and Spicy Dishes

  • Sushi: Light sushi rolls with tuna or salmon are a great match, particularly when paired with soy sauce and a little wasabi.
  • Thai Spring Rolls: Fresh, vegetable-packed Thai spring rolls complement the wine’s herbal and citrus notes.
  • Spicy Seafood Curries: Thai or Indian seafood curries with coconut milk and light spices pair well with the wine’s crisp, refreshing qualities.
