ABOUT THE WINERY:

For over 100 years the Rabino family has been cultivating the vineyards in Barolo, Piemonte. They make bold wines with a strong personality linked to the history of Monforte d’Alba, which has become a UNESCO heritage site.

The Rabino Agricultural Company was born in 1909, founded by Rabino Bernardo who planted the first vineyards. In 1920 he built the first small cellar in the hamlet of Bussia San Giovanni where he began to produce the first fine wines of the company.

Most of the grapes harvested were sold and only a small part was vinified for a select clientele, but the son Marco, decided to treasure everything that has been handed down the family. Today, all the grapes are vinified in the company cellar through a natural method and with respect for tradition.

A powerful, single-vineyard Barolo sourced from cru San Giovanni displays a wide range of complex aromas such as violets, black tea, tar, and sour cherries. Lots of polished tannins with a distinct freshness result in an approachable Barolo that can be drank now, or cellared for years.

Decanting: Decant for at least 2–3 hours to soften tannins and fully develop the wine’s bouquet.
Serving Temperature: Serve slightly below room temperature, around 60–65°F (16–18°C), for optimal flavor.

Meat Dishes

  • Braised Beef or Lamb: Dishes like osso buco, beef brisket, or lamb shanks enhance Barolo’s deep flavors and soften its tannins.
  • Game Meats: Venison, wild boar, or duck served with berry or herb-based sauces complementthe wine’s earthy and fruity notes.
  • Grilled or Roasted Meats: Ribeye steak, prime rib, or roasted pork loin seasoned with rosemary or sage.

Pasta and Risotto

  • Wild Boar Ragù: Pappardelle with a rich, gamey ragù is a classic pairing that balances the wine’s acidity.
  • Mushroom Risotto: Earthy porcini mushrooms or truffles in a creamy risotto amplify Barolo’s savory qualities.
  • Agnolotti del Plin: These Piedmontese stuffed pasta parcels, often filled with meat or vegetables, pair beautifully with Barolo.

Truffle-Inspired Dishes

  • Tajarin with White Truffles: This quintessential Piedmont dish matches perfectly with Barolo’s earthy and floral tones.
  • Truffle Risotto: Creamy risotto with shaved truffles enhances the wine’s complexity.
  • Polenta with Truffle Cream Sauce: A luxurious pairing that mirrors the wine’s depth.

Vegetarian Options

  • Stuffed Mushrooms: Portobello mushrooms stuffed with herbs and cheese reflect Barolo’s earthy character.
  • Eggplant Parmesan: The tomato sauce, cheese, and roasted eggplant balance the wine’s acidity and tannins.
  • Grilled Vegetables: Zucchini, eggplant, bell peppers, and asparagus drizzled with olive oil pair beautifully with Barolo.
