ABOUT THE WINERY:

Ocone is a small, family winery based in the foothills of Taburno, just outside Napoli. Founded in 1910 by Giuseppe Ocone and reinvented in the 1960s by his son, Domencio, the focus has always been on Taburno’s previously forgotten grapes – Aglianico, Greco, and Falanghina. The estate has been renowned for its quality and philosophy ever since. The transition to organic cultivation of these ancient varieties has established Ocone as a world-class producer. At the moment, the winery is run by Giorgio and Roberta Vergona, who continue to combine tradition and modernity.

The grapes of Apollo come from the volcanic hillsides around the town of Ponte, where the vineyards are farmed organically and grapes are hand-picked to make the most clean and precise expression of Aglianico del Taburno. Fermented using indigenous yeasts and briefly aged in wood, it is ensured that terroir is the sheer focus of this wine. The bouquet displays aromas of cherries and pepper, layered with spices, black tea, and tar. Full–bodied and dry, yet surprisingly approachable. Apollo is suited for both immediate drinking and cellaring.

Serving Suggestion: To unlock the full experience of Wine of the Sea, we recommend decanting Red Wine for 2 – 3 hours.

Meat Dishes

  • Grilled or Roasted Lamb: Especially with rosemary or thyme. The tannins in Aglianico cut through the richness of lamb.
  • Beef Stews or Braises: Osso buco, beef brisket, or a classic pot roast complements Aglianico’s deep flavors.
  • Game Meats: Wild boar, venison, or duck with a fruit glaze (like cherry or plum) works beautifully.

Rich Pasta and Risotto

  • Bolognese Sauce: A classic meat-based pasta sauce pairs wonderfully with Aglianico’s acidity and structure.
  • Mushroom Risotto: Earthy mushrooms mirror the wine’s savory and rustic tones.
  • Lasagna: Especially with a rich ragù and creamy béchamel.

Charcuterie and Cheese

  • Cured Meats: Salami, prosciutto, and capocollo pair nicely with the wine’s robust profile.
  • Aged Cheeses: Pecorino, Parmigiano-Reggiano, or aged Asiago match its intensity.

Wood-Fired Pizzas

  • Margherita with Sausage: The tomato’s acidity and the sausage’s richness pair well with Aglianico’s boldness.
  • Wild Mushroom Pizza: A savory, earthy choice for the wine’s earthy notes.

Grilled or Roasted Vegetables

  • Eggplant Parmigiana: The smoky, creamy, and tangy flavors are a great match for Aglianico.
  • Roasted Peppers and Zucchini: Grilled veggies drizzled with olive oil bring out the wine’s herbal notes.
