ABOUT THE WINERY:

The first vineyard in La Lomellina di Gavi was planted in 1816, and the estate was purchased by the Raggio Family ir the end of the 19th century, which stands witness on how long have the Raggios been working the land. Since 2006, the winery is run by Emanuela Croce Raggio, whose philosophy is practicing low-impact viticulture. Since 2019, they have been certified as an organic producer.

“Old Annee” Gavi is sourced from 100% Cortese grape. Afer the fermentation, it is aged for 9 months in stainless steel vats, and three more years in the bottle prior to release. Very subtle, yet complex aromas of quinces, almonds and cooked peach appear on the nose. The palate continues with a smooth, milky texture and ends with a Iong lasting, mineral finish.

Serving Temperature: Serve Gavi di Gavi Marcheese Raggio well-chilled, around 45–50°F (7–10°C), to allow its refreshing acidity and delicate aromas to shine.
Glassware: Use a white wine glass with a slightly tapered shape to concentrate the delicate aromas and preserve the wine’s crisp character.

Seafood

  • Grilled Fish: Grilled sea bass or branzino with lemon and olive oil works beautifully with Gavi’s crisp acidity, which complements the delicate flavors of the fish.
  • Shellfish: Oysters, clams, or scallops with a squeeze of lemon are classic matches. The wine’s refreshing citrus notes pair wonderfully with the fresh, briny taste of shellfish.
  • Sushi: Sushi (especially with white fish or lightly seared tuna) pairs well, as the wine’s acidity balances the clean, delicate flavors of the fish.

Pasta Dishes

  • Pasta with Light Seafood Sauce: Linguine with clams or spaghetti with shrimp and garlic is a perfect match, as the wine’s acidity cuts through the richness of the olive oil and garlic while enhancing the seafood flavors.
  • Pasta Primavera: A simple pasta primavera with fresh, seasonal vegetables (zucchini, peas, tomatoes) and a light olive oil or lemon sauce pairs excellently with the fresh, clean taste of Gavi.
  • Pasta with Pesto: A pasta with basil pesto or pasta alla genovese also works well, as the wine’s acidity balances the richness of the basil and olive oil in the pesto.

Cheese Pairings

  • Fresh Cheeses: Light, creamy cheeses like fresh mozzarella, goat cheese, or ricotta work beautifully with Gavi. Their mild flavors complement the wine’s crisp, citrusy profile.
  • Aged Pecorino: Pecorino Romano or Pecorino Sardo offers a nice savory counterpoint to Gavi’s freshness, creating a balanced pairing.
  • Gorgonzola: A soft blue cheese, such as Gorgonzola or Dolce Gorgonzola, pairs nicely with the wine’s acidity, which cuts through the creaminess of the cheese.

Light Meat Dishes

  • Grilled Chicken: Grilled chicken with lemon and herbs is a great match, as the wine’s crispness enhances the freshness of the chicken and herbs.
  • Chicken Salad: A light chicken salad with citrus dressing or a grilled chicken Caesar salad pairs wonderfully with Gavi’s zesty acidity.
  • Roast Turkey: A roast turkey with lemon, rosemary, and thyme will complement Gavi’s fresh and floral notes.

Vegetarian Dishes

  • Caprese Salad: A Caprese salad with tomato, mozzarella, fresh basil, and a drizzle of olive oil is a perfect match. The wine’s acidity enhances the freshness of the tomatoes and balances the richness of the cheese.
  • Grilled Vegetables: Grilled vegetables like eggplant, zucchini, and bell peppers with a touch of olive oil and herbs complement the wine’s fresh, mineral qualities.
  • Stuffed Mushrooms: Stuffed mushrooms with breadcrumbs, garlic, and herbs or a mushroom risotto also work well with the crisp character of Gavi.

Appetizers and Antipasti

  • Bruschetta: Bruschetta with tomatoes, garlic, basil, and olive oil pairs wonderfully with the fresh, bright acidity of Gavi.
  • Antipasto Platter: A variety of prosciutto, salami, and olives on an antipasto platter pairs well with Gavi’s clean, refreshing profile.
  • Vegetable Frittata: A light vegetable frittata with spinach or zucchini is another excellent option, as the wine’s acidity enhances the flavors of the eggs and vegetables.

Light Fish and Poultry Dishes

  • Baked Cod: A delicate baked cod with a light lemon-butter sauce works beautifully with Gavi’s crisp acidity.
  • Grilled Sole: Grilled sole with a drizzle of olive oil and lemon pairs wonderfully with the mineral and citrus notes of Gavi.
  • Chicken Piccata: Chicken piccata with capers and a lemon-butter sauce complements the citrus notes of the wine.

Dessert Pairings

  • Lemon-Based Desserts: A lemon sorbet or lemon tarts pairs perfectly with Gavi, as the wine’s citrus notes enhance the flavors of the dessert.
  • Fruit Tart: A mixed fruit tart (with berries, peaches, or apples) complements the fresh and fruity qualities of the wine.
