    ABOUT THE WINERY:

Founded in 1994 in the town of Barbaresco, the Montaribaldi Winery has had a clear focus on producing high-quality, single-vineyard wines that represent the terroir as much as possible. With a low-intervention winemaking approach and viticultural practices that keep eco-sustainability a priority, Montaribaldi works in harmony with nature and strives toward using energy from renewable resources.

Dark, rich, and generous both on the palate and the nose, this astonishing expression of Nebbiolo justifies the reputation that Montaribaldi carries. With black plums, cherries, tar, and mushrooms emerging on the nose, it constantly evolves in the glass, developing aromas of truffles, forest floor, and black tea. Generous yet polished tannins are balanced out by a high acidity, making this a full-bodied wine designed to be enjoyed now – or aged for decades.

Decant: Barbaresco benefits from decanting for at least 1-2 hours to soften its tannins and fully develop its aromas.
Serve at the Right Temperature: Around 60–65°F (16–18°C) is ideal to enhance its aromas and flavors.

    Meat Dishes

    • Braised Beef or Lamb: Dishes like osso buco or lamb shanks pair beautifully with Barbaresco’s tannins and earthiness.
    • Game Meats: Venison, wild boar, or duck cooked with herbs and spices highlight the wine’s earthy and floral notes.
    • Steak with Truffle Butter: A luxurious pairing that matches the wine’s savory and truffle-like aromas.

    Pasta and Risotto

    • Tajarin with Truffle Butter: A classic Piedmontese pairing that complements Barbaresco’s truffle and earthy undertones.
    • Beef Ragù: Pappardelle or tagliatelle with a slow-cooked ragù sauce balances the wine’s tannins with richness.
    • Risotto with Mushrooms: Earthy mushrooms enhance Barbaresco’s savory complexity.

    Cheese Pairings

    • Aged Cheeses: Parmigiano-Reggiano, Pecorino, or Grana Padano pair well due to their nuttiness and saltiness.
    • Taleggio or Fontina: Creamy, soft cheeses contrast nicely with the wine’s firm tannins.
    • Blue Cheese: Mild Gorgonzola creates a surprising balance with Barbaresco’s fruit and spice.

    Truffle-Based Dishes

    • Truffle Risotto: Barbaresco’s earthy, floral, and slightly spicy notes pair exceptionally well with fresh truffles.
    • Truffle-Infused Pasta: Anything with truffle oil or fresh shaved truffles is a match made in heaven.

    Vegetarian Options

    • Stuffed Portobello Mushrooms: The meaty texture and earthy flavors mirror the wine’s savory profile.
    • Eggplant Parmesan: Rich tomato and cheese flavors are balanced by Barbaresco’s acidity.
    • Grilled Vegetables: Zucchini, peppers, or eggplant drizzled with olive oil and balsamic vinegar enhance the wine’s fruity notes.

    Charcuterie

    • Prosciutto and Salami: Cured meats’ saltiness pairs beautifully with Barbaresco’s bright acidity.
    • Bresaola: Lean cured beef from northern Italy works particularly well with the wine’s elegance.
